Revising recipes, making crab cakes and ordering fresh produce are all part of a day’s work for Sam. For eight years, Sam has been wearing different hats, but perhaps his greatest talents lie in the kitchen.
"We are constantly creating newer, healthier recipes for the 2000s," claims Sam. "People want to eat well and I like to experiment with seafood salads, soups, sauces, seafood cakes, dips and spreads."
Sam prefers the taste of different, rare fish such as the Hawaiian moonfish, opah. He likes its tuna flavor and swordfish texture.
Tequila Marinated Fish or Shrimp _ cup olive oil _ cup chili sauce _ cup tequila 2 garlic cloves, minced _ teaspoon salt _ teaspoon ground red pepper 2 lbs. fresh fish (opah or shrimp works well)
Blend all marinade ingredients together in a bowl. Add fish or seafood to be marinated. Leave in mixture for about one or two hours for fish, up to six hours for shell-on shrimp. Cook fish or seafood on grill or sauté in pan for eight minutes per inch of thickness. Tip: Use the rest of the tequila to make margaritas!
