For more than 15 years, Eugene has worked at Burhop’s in Wilmette, Glenview, Hinsdale and now Chicago. After climbing the ladder from dishwasher to counter help to manager, there is little Eugene has not done at the seafood store.
An avid fisherman, Eugene likes to fish on his free time and hopes to make a fishing trip to Michigan this spring. His favorite catch is walleye, "…because they give you a good fight," he explains. Eugene also likes their sweet and mild flavor.
Oven-Baked Walleye 2-8 oz. walleye fillets 2-tablespoons Wishbone ranch dressing _ cup seasoned breadcrumbs _ cup flour 2-tablespoons Parmesan cheese
Preheat oven to 450 degrees. Line a baking pan with aluminum foil or parchment paper and place fillets on baking pan. Brush fillets with one-tablespoon ranch dressing on each fillet. Mix flour, breadcrumbs, Parmesan cheese and sprinkle over both fillets. Bake for 10 minutes.
